Just Another Manic Monday

Whew, it’s just another Manic Monday here in my house!

I’m trying to make it out of the house to get some basic staples and produce at Aldi today. Both my toddler and I are recovering from minor colds, so needless to say, mommy doesn’t feel like grocery shopping today, but nevertheless I need to do it!

Today I’ve decided to make my first attempt to formally post my meal planning schedule on my blog. I’m sure you’ve heard it before from other savvy shoppers and frugal folks: Meal planning and shopping-by-your-list helps save time and money on your groceries because it eliminates extra time and trips out to the store during the week and it hopefully eliminates impulse buys since you know exactly what you’ll be cooking and preparing for the week. I’m not sure I’ll be posting my meal plans each week, but in any case, here are my dinners for this week:

Monday: Chicken Pot Pie (using cut-up frozen cooked chicken from my freezer), macaroni & cheese and salad (comfort food dinner!) both the pot pie and mac & cheese recipes come from my Betty Crocker The Big Red Cookbook

Tuesday: Crockpot Pulled Pork BBQ similar to this recipe (purchased Pork Loin Top Loin Roast at Safeway for only $1.99 per lb a few days ago) on Kaiser Rolls and side dish of Broccoli (on sale for only $0.89 per 16-oz. pack at Aldi this week)

Wednesday: Silver’s Savory Chicken/Broccoli/Noodle Casserole and Salad

Thursday: Crockpot Chili and Cornbread both recipes from my Betty Crocker The Big Red Cookbook

Friday: Spaghetti & Meatballs with side dish of Broccoli meatballs made ahead of time, cooked and frozen

Saturday: Left-overs or Pizza in the freezer

Sunday: SuperBowl Party at a friend’s place – bringing snack food, hopefully some homemade guacamole (avocados are on sale really cheap this week at Aldi) and chips and whatever else is needed… would love to bake and decorate some football cookies, but not sure I will realistically have time to make these.

Nothing too fancy, but these are all meals that my family likes. You’ll probably notice that we have a lot of broccoli on the menu this week, mainly because of the great sale this week at Aldi (of course my toddler is not a huge broccoli fan, but both my husband and I like it).  I’m also relying on my crockpot, meat sales from this week and last week, and some frozen items to help me out this week.

If anyone has suggestions for good side dishes (besides broccoli and salad) that might help me liven up the menu, leave a comment and let me know!
